The history of tequila in Mexico is a spirited one (pardon us for the pun). Crafting the best tequila is the pride and joy of Mexico; after all, it is the country’s national liquor. In fact, tequila is exclusive to Mexico and can only be produced there. In fact, the Mexican government officially declared tequila an intellectual property of Mexico in 1974, preserving the authenticity and quality of the traditional liquor.
Aldez Tequila is proud to produce authentic Mexican tequila in the sun-bathed fields of Jalisco, one of the few handful of states where tequila is permitted to be produced. Blue agaves cover the hillsides throughout Jalisco, and are at the heart of every bottle of tequila. Aldez Tequila is made using 100% blue agave, all organic and sourced responsibly from a single estate in the Lowlands of Jalisco, Mexico. Our Aldez Mezcal is also coming on the horizon. While all tequilas are mezcals, not all mezcals are tequila, as tequila is made purely using the blue agave plant, whereas mezcals can use a variety of agave.
The early roots of tequila date back to approximately 1000 B.C., when thirsty Aztecs in Jalisco crafted Pulque, an alcoholic beverage made from the fermented sap of the maguey plant (widely known now as the blue agave). This milky-white beverage was so highly regarded in Aztec culture that they even worshiped two gods who were regarded for their relationship with alcohol: Mayahuel, the goddess of maguey and her husband, Patecatl, the god of pulque. When the Spaniards arrived in the 1500’s they made alterations to the pulque process which led to the tequila we cherish today. Aldez takes tremendous pride in these deep roots, in continuing the tradition of producing tequila with time-honored sustainable methods, and in the knowledge that our tequila is the centerpiece for celebrations, memories and magic moments like so many generations before.
Aldez tequila is thoughtfully produced from soil to seal, honoring traditional methods and creating a high-quality product, as real as the people who drink it. Come harvest time, jimadores (field workers) remove what looks like a giant pineapple, called the piña, from the heart of the blue agave plant. The plants are hand-harvested using a sharp tool called coa de jima. Each agave is then hand-prepared and cooked for nearly 3 days in our brick ovens before beginning the journey of open vat fermentation, which is different for our three artisanal tequilas: Blanco, Reposado, and Añejo.
Our Blanco tequila embodies the blank slate that life offers- bottled directly after its second distillation, Blanco is a reminder that life is full of possibilities, promise and potential.
Our Reposado spends 8 months on a journey of self-discovery, soaking in the bold and rich influences of our reclaimed bourbon casks, a reminder that your special personality is molded from your unique experiences and influences over time.
Our Añejo tequila reminds us that the most significant accomplishments life has to offer take time and patience, as this tequila takes about 18 months soaking up the complexity of our reclaimed bourbon casks.
